And if you've never tried papalo before, it's a leafy herb related to marigold that tastes faintly of cucumber, tarragon, and rue. Its most interesting characteristic is the scent profile, that comes off similar to the pleasant aromas left behind in a lactic acid ferment (which is how pickles are made).
