Chanterelle mushrooms are finally popping up, and we're processing them in limited quantities.

Our chanterelles are freshly picked, stringed, salted, with the liquid made into salt then roasted in its own salt. The liquor from the salted mushrooms is allowed to evaporate before adding in the fresh solids, thereby salt-baking the mushrooms. What we're left with is a mess of crumbly threads and savory flakes of salt.

My kids eat these plain when I'm not looking, but I much prefer them folded into butter or crumbled over pasta, but I'm really looking forward to using this stuff in a grilled cheese.
